Ingredients

  • 640–800 g cubed mixed melon (watermelon, cantaloupe, honeydew)
  • 2 medium English cucumbers or mini cucumbers, sliced
  • 2 medium oranges, segmented
  • 1-2 avocados, diced
  • 5 g fresh mint, sliced
  • 5 g fresh basil, sliced
  • 40 g rocket
  • 60 ml extra virgin olive oil
  • 2 tbsp lemon juice
  • ½ tsp salt
  • ½ tsp pepper

Method

  1. Mix olive oil, lemon juice, salt, pepper, mint, and basil in a bowl.
  2. Mix melon, cucumbers, oranges and avocado in a bowl.
  3. Pour wet ingredients over produce.
  4. Add rocket to bowl, spoon produce mixture onto the rocket.
  5. Enjoy!
